Breakfast

A HEARTY CULINARY EXPERIENCE THAT GETS YOU READY FOR
WHATEVER YOUR EXCITING DAY MAY HOLD!

Breakfasts change daily, often depending upon what is freshest, (or maybe what strikes our fancy); but, it always includes fruit, something yummy with our farm fresh eggs, a “meat” of some kind, and a fresh pastry. Maybe it’s brioche French toast or fluffy pancakes, possibly, our version of Eggs Benedict, a casserole with a Mexican flair, “chicken fried” pork chops, (with cream gravy and biscuits of course), or maybe our famous “Apple Enchiladas”. Regardless, we invite you to luxuriate in breakfast in bed, and relish every bite!

PICNIC DELIGHTS - ENJOYED AL FRESCO OR IN YOUR ROOM

Here is a sample of some of our favorites for picnicking. We can also provide chilled salads, soups, fruits, and premium deli sandwiches. Our chef is happy to make anything you want within reason and with enough notice. Please tell us if this is for carrying with you or enjoying in your room.

*BREAD, CHEESE AND WINE
A loaf of homemade bread with a variety of Cheeses, a basket of Fruit, and a chilled bottle of Champagne

STUFFED ARTICHOKE
A loaf of homemade Bread and a tender Artichoke, leaves stuffed with crabmeat, capers and green onions

QUICHE LORRAINE
Homemade traditional Quiche filled with bacon and Swiss cheese

SMOKED SALMON
Served European style with capers, cream cheese and sliced onion

COLD SLICED BEEF TENDERLOIN
Served with horseradish sauce and homemade bread

These are samples of some of our favorite family dishes; recipes that are tried and true, and guaranteed to engender that extra romance and pampering that a home away from home should provide.  Be sure to ask for any specials of the day too!

NOTE: The Chef is happy to make anything you want with-in reason and enough notice. Times for dinner vary according to your convenience but is usually served between 6:00 – 7:00.

PRIME ANGUS RIBEYE, OR BEEF TENDERLOIN STEAKS
Our ranch favorites, seasoned perfectly, served with hearty potatoes, and fresh grilled garden vegetables.

CORNISH GAME HEN
Delightful Individual Hens Basted with a citrus / honey glaze.

RACK OF LAMB
Fresh New Zealand Lamb crusted with bread crumbs, garlic and fresh parsley.

Fresh T-Bone Lamb Chops, grilled with lemon zest, fresh olive oil, & herbs.

PORK TENDERLOIN
Whole pork tenderloin grilled with a port wine glaze and served with a chef-made raspberry chipotle sauce. A delicious combination of flavors. Hearty, but healthy!

LEMON CREAM CHICKEN
Boned chicken breast sautéed and served with a rich lemon cream sauce, laced with sherry and topped with fresh parmesan cheese.

PEPPER ENCRUSTED STEAK
Choose between a Rib-eye or Fillet, coated with Fresh cracked pepper, served with a fabulous Brandy / Butter / Cream Sauce and side dish. (This is my favorite, with big hunks of French Bread to savor the sauce with…”Sop”)

FRESH SEAFOODS:

SCALLOPS PROVENCALE
Vine-ripened tomatoes, shallots, white wine and lemon reduce to provide a delicate background for tender scallops served over angel hair pasta, with fresh asparagus.

FRESH SALMON
Salmon fillet can be prepared a variety of ways, to suit your
tastes. Grill it, Bake it, or Saute it.
-- Served with a light yogurt/ dill/ caper sauce, or a simple lemon
butter. Always delicious, light and healthy.

SPICY GRILLED NEW ORLEANS STYLE SHRIMP
Tangy shrimp grilled with garlic, chilies, pepper and lemon, served with a baguette of French bread.

PANKO FRIED SHRIMP
Jumbo Shrimp coated with a light and crispy Panko bread-crumb batter, & fried to perfection.

SHRIMP SCAMPI
Juicy Shrimp sautéed in butter & garlic, and topped w/ an extra rich sauce of lemon/ butter/parmesan cheese and white wine.

SHRIMP DIJON
Delicately Sauteed Shrimp, topped with a divine Tarragon, Dijon mustard béchamel. Served with chefs choice of pasta.

*All entrees are served with the chef's choice of side dishes, fresh vegetables from our garden, a lovely salad and home made breads. A decadent dessert or light appetizer can be added upon request.

NOTES:
Flambeed - For a special occasion, think of an intimate, table-side flambéed dessert! The Chef is famous for his dramatic presentations that really “Wow” our guests.

Last Minute Quick Dinners:
We keep a number of chef- prepared Dinner items on hand, and ready to deliver, with a fresh bread and garden salad. Guests can heat and enjoy at their leisure. (Examples include such items as assorted pot pies, lasagna, enchiladas, chicken tetrazzini, and home made pizzas.)
